Boil the eggs
Place the eggs in a pot and cover with cold water. Bring to a boil over medium-high heat, then remove from heat and cover. Let sit for 10 minutes.
Cool and peel
Transfer eggs to an ice bath to cool completely. Once cooled, gently crack the shells and peel the eggs.
Pro tip: Peeling under running water can help remove stubborn bits of shell.
Prepare the yolk filling
Halve the eggs lengthwise and remove yolks. In a bowl, mash yolks with a fork. Add mayonnaise, dijon mustard, lemon juice, smoked salmon, capers, and dill. Mix until smooth. Ensure the smoked salmon reaches an internal temperature of 145°F / 63°C by probing the thickest part. Season with salt and pepper.

Fill the egg whites
Spoon or pipe the yolk mixture back into the egg whites, creating a generous mound.

Chill the devilled eggs

Before serving, garnish each egg with a small sprig of dill. Serve chilled.
