Instructions
Prepare the vanilla
Split the vanilla bean lengthwise and scrape out the seeds with the back of a knife. Set both seeds and bean aside.
Pro tip: Using a fresh vanilla bean enhances the flavour more than vanilla extract.
Combine ingredients
In a medium saucepan, combine ground cherries, granulated sugar, vanilla seeds and bean, lemon juice, and water.
Cook the mixture
Bring the mixture to a simmer over medium heat, stirring occasionally. Reduce heat to low and let it cook gently for 25-30 minutes until the cherries have broken down and the compote thickens.
Pro tip: Crush some cherries against the side of the pan with a spoon to help thicken the compote.
Check consistency
Once the compote has reached your desired thickness, remove the vanilla bean and discard it.
Pro tip: The compote is ready when it evenly coats the back of a spoon.
Cool the compote
Remove the pan from heat and let the compote cool slightly before transferring it to a serving dish or storage container.
Store the compote
Transfer the compote to a sterilized jar and seal. Store in the refrigerator for up to two weeks.
