Prepare the Shrimp
Prepare the Shrimp In a large pot, bring water to a boil and add the shrimp. Cook for 3-4 minutes until shrimp are pink and opaque. Check that the internal temperature of the shrimp reaches 145°F / 63°C by inserting a food thermometer into the thickest part of the shrimp. Drain and allow to cool slightly.
Pro tip: Ensure shrimp are cooked through but not rubbery.
Dissolve Gelatin
In a small bowl, sprinkle gelatin over cold water and let it stand for 5 minutes. Gently heat until gelatin is completely dissolved.
Pro tip: Do not overheat the gelatin, as it can lose its gelling properties.
Blend Ingredients
In a food processor, combine cooked shrimp, heavy cream, mayonnaise, lemon juice, salt, white pepper, and dissolved gelatin. Blend until smooth.
Pro tip: For a perfectly smooth mousse, blend the mixture until no chunks remain.
Add Fresh Dill
Stir in chopped fresh dill by hand to maintain its texture and flavour.
Pro tip: Add dill just before chilling to keep its vibrant colour.
Chill the Mousse
Pour the mixture into a mould or serving dish. Cover and refrigerate for at least 2 hours until set.
Pro tip: For individual servings, use ramekins.
Serve the Mousse
Once set, serve the shrimp mousse chilled, garnished with additional dill if desired.
