Pop the popcorn

Make the caramel sauce
In a heavy-bottomed saucepan, combine 1 cup granulated sugar, 1/4 cup butter, and 1/2 cup light corn syrup over medium heat. Stir constantly until the mixture comes to a boil.

Boil the caramel
Once boiling, stop stirring and let the mixture boil for 5 minutes or until it reaches 240°F (115°C) on a candy thermometer.

Add vanilla and baking soda
Remove from heat and quickly stir in 1 teaspoon vanilla extract and 1/4 teaspoon baking soda until fully incorporated.

Coat the popcorn
Immediately pour the caramel over the popped popcorn. Stir gently but quickly to coat all the kernels evenly.

Cool and serve
Spread the coated popcorn onto a parchment-lined baking sheet to cool for about 10 minutes. Break apart any large clusters before serving.
