This smoked beer cheese chicken dip is the appetizer that becomes the main event. A rich base of cream cheese, sharp cheddar, and lager beer is loaded with shredded smoked chicken, then slow-smoked in a cast iron skillet until bubbly and infused with wood smoke. In a bowl, combine softened cream cheese, 1.5 cups of the cheddar, sour cream, beer, garlic powder, paprika, mustard powder, and cayenne. Stir until smooth.

Fold in the shredded chicken until evenly distributed throughout the cheese mixture. Ensure the chicken is fully cooked and reaches an internal temperature of 165°F / 74°C by probing the thickest part of the chicken pieces.

Transfer to skillet

Pour the mixture into a 10-inch cast iron skillet. Top with the remaining 1/2 cup of shredded cheddar.

Place the skillet on a smoker set to 250°F with hickory or pecan wood. Smoke for 40-45 minutes until the edges are bubbly and the top cheese is melted and slightly golden.
