Preheat the oven
Preheat your oven to 180°C (350°F).
Sear the chicken
Heat olive oil in a large ovenproof skillet over medium-high heat. Season the chicken thighs with salt and pepper, then sear them skin-side down for about 5 minutes until golden brown. Flip and sear the other side for another 3 minutes. Remove and set aside.
Pro tip: Use a thermometer to ensure the internal temperature reaches 74°C (165°F) when fully cooked.
Prepare the tomato sauce
In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute. Add the diced tomatoes, oregano, and basil. Stir to combine and bring to a simmer.
Pro tip: Deglaze the pan with a splash of white wine for extra depth of flavour.
Braise the chicken
Return the chicken to the skillet, skin-side up. Spoon some sauce over the chicken. Cover the skillet with a lid or foil and transfer to the oven. Braise for 30 minutes.
Gratinate with cheese
Remove the lid or foil, sprinkle the grated mozzarella cheese evenly over the chicken and sauce. Return to the oven and bake uncovered for an additional 15 minutes or until the cheese is golden and bubbly.
Pro tip: Broil for the last 2 minutes for a crisp cheese topping.
Rest and serve
Remove the skillet from the oven and let it rest for 10 minutes before serving. This allows the flavours to meld and the chicken to reabsorb some of the juices.
