Instructions
Prepare the shrimp
If not already done, peel and devein the shrimp. Chop them into small, bite-sized pieces.
Pro tip: Use a sharp knife to ensure clean cuts.
Mix the shrimp
In a bowl, combine the chopped shrimp with mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Mix well until the shrimp are evenly coated. Ensure the shrimp reach an internal temperature of 145°F / 63°C by inserting a food thermometer into the thickest part of a shrimp piece. The shrimp should be opaque and firm.
Pro tip: Adjust seasoning to your taste.
Slice the cucumbers
Slice the cucumbers into 1/2 cm rounds. Arrange them on a serving platter.
Pro tip: Use a mandoline for uniform slices.
Assemble the canapés
Place a spoonful of the shrimp mixture on each cucumber slice.
Pro tip: Do not overfill to keep them easy to pick up.
Garnish the canapés
Sprinkle chopped dill on top of the shrimp mixture for added flavour and colour.
Pro tip: Cilantro can be used as an alternative garnish.
Chill before serving
Refrigerate the assembled canapés for at least 15 minutes before serving to allow the flavours to meld.
Pro tip: Serve on a chilled platter to keep them fresh longer.
