Cook the Pumpkin
In a large pot, bring 2 litres of water to a boil. Add the cubed pumpkin and cook until tender, about 20 minutes. Remove from heat and mash the pumpkin until smooth.
Pro tip: Use a potato masher or an immersion blender for a smoother texture.
Cook the Beef
In another pot, heat olive oil over medium heat. Add beef shank pieces and brown on all sides, about 5-7 minutes.
Pro tip: Browning the beef enhances the flavour of the soup.
Sauté Aromatics
Add the chopped onion and minced garlic to the pot with beef. Sauté until the onion becomes translucent, about 3 minutes.
Combine Ingredients
Add the mashed pumpkin to the beef pot. Stir in the turnip, carrots, Scotch bonnet pepper, thyme, parsley, salt, and pepper.
Pro tip: For a milder soup, remove the Scotch bonnet pepper before serving.
Simmer the Soup
Reduce heat to low, cover, and let the soup simmer for 30 minutes, stirring occasionally.
Pro tip: Adjust seasoning to taste during the simmering process.
Finish and Serve
Stir in lime juice and noodles (if using) and cook for an additional 5-10 minutes until noodles are tender. Serve hot.
