Prepare the oven
Preheat your oven to 350°F (175°C).
Brown the turkey thighs
In a large oven-safe pot, heat olive oil over medium-high heat. Add turkey thighs, skin side down, and brown for about 5-6 minutes on each side until golden. Remove and set aside.

Cook the aromatics
In the same pot, add sliced onions and garlic. Cook until onions are soft and translucent, about 5 minutes.
Deglaze the pot
Pour in the white wine and scrape up any browned bits from the bottom of the pot. Let the wine reduce by half.

Combine ingredients
Return the turkey thighs to the pot. Add chicken broth, fresh tarragon, salt, and pepper. Bring to a simmer.
Braise the turkey thighs
Cover the pot with a lid and transfer it to the preheated oven. Braise for 1 to 1.5 hours or until turkey is tender and reaches an internal temperature of 165°F (74°C).
Pro tip: Check the temperature at the thickest part of the thigh, avoiding the bone.
Finish the sauce
Remove the pot from the oven and transfer turkey thighs to a serving platter. Stir butter into the sauce until melted and smooth.
