Blanch sweetbreads
Fill a pot with water and bring to a boil. Add sweetbreads and blanch for 3 minutes. Remove and immediately place in ice water to stop the cooking process. Drain and remove any membranes.

Sauté sweetbreads
Heat 1 tablespoon of olive oil in a pan over medium-high heat. Add sweetbreads and cook for 5-7 minutes until golden brown on all sides. Remove from pan and set aside.

Cook mushrooms
In the same pan, add another tablespoon of olive oil. Sauté the chopped shallot for 2 minutes, then add the sliced mushrooms. Cook until the mushrooms are tender and golden, about 5 minutes.

Deglaze the pan
