In a blender, combine the strawberries, sugar, and lemon juice. Blend until smooth. Pass the mixture through a fine sieve into a bowl to remove seeds.

Dissolve the gelatin
Sprinkle gelatin over cold water in a small bowl. Let it sit for 5 minutes. Heat gently in a microwave or on the stove until fully dissolved.

Make the mousse
Stir the dissolved gelatin into the strawberry puree until well combined. Whip the heavy cream to soft peaks and gently fold it into the strawberry mixture.

Prepare the mold
Line a 20 cm (8-inch) springform pan or a charlotte mold with parchment paper. Dip ladyfingers quickly in strawberry syrup and line the sides and bottom of the mold.

Assemble the charlotte
Pour the strawberry mousse into the prepared mold over the ladyfingers. Smooth the top with a spatula.
