Line a 20 cm (8-inch) springform pan with parchment paper. Arrange ladyfingers upright around the sides of the pan, fitting them closely together.

Make the strawberry puree
Blend 500 g of strawberries with sugar and lemon juice until smooth. Strain to remove seeds and set aside.

Prepare gelatin
Sprinkle gelatin over cold water and let it bloom for 5 minutes. Warm gently until dissolved, then mix into the strawberry puree.

In a chilled bowl, whip the heavy cream until soft peaks form. Carefully fold the whipped cream into the strawberry puree.

Assemble the charlotte
Pour half of the mousse into the prepared mould. Add a layer of halved strawberries, then cover with the remaining mousse. Smooth the top.

Chill the charlotte
Refrigerate for at least 6 hours or until set. Decorate with remaining halved strawberries before serving.
