Preheat the oven
Preheat your oven to 450°F (230°C).
Prepare and roast peppers
Place the halved peppers on a baking sheet, skin side up. Roast for 20-25 minutes until the skin is charred and blistered.
Pro tip: For extra smoky flavour, use a broiler for the last 5 minutes.
Steam and peel peppers
Transfer the roasted peppers to a bowl and cover with plastic wrap for 10 minutes. This helps loosen the skins. Peel off the skins once cooled.
Pro tip: Peeling the skin can be easier under cool running water.
Sauté onions and garlic
In a pan, heat olive oil over medium heat. Sauté the onion until soft, about 5 minutes. Add garlic and cook for another minute.
Pro tip: Do not let the garlic burn as it will become bitter.
Blend the sauce
In a blender, combine roasted peppers, sautéed onions and garlic, balsamic vinegar, salt, and pepper. Blend until smooth.
Pro tip: Adjust consistency with a bit of water if needed.
Adjust seasoning
Taste the sauce and adjust seasoning if necessary. Add red pepper flakes for extra heat.
