Instructions
Preheat the oven
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
Cook the filling
In a skillet over medium heat, add olive oil and sauté onions and garlic until translucent. Add ground meat, thyme, salt, and pepper. Cook until the meat is browned, about 8 minutes. Ensure the internal temperature of the meat reaches 160°F / 71°C by inserting a meat thermometer into the thickest part of the filling.
Cool the filling
Transfer the cooked meat filling to a bowl and let it cool for 10 minutes.

Prepare the pastry
Roll out the puff pastry sheets on a floured surface. Cut each sheet into 4 equal squares.

Fill the pastry
Place a spoonful of meat filling in the centre of each pastry square. Fold over to form a triangle and press the edges to seal.

Apply egg wash
Brush the tops of the pastry with beaten egg for a golden finish.
Bake
Place the pastries on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
