Prepare the shrimp
If not done already, cook the shrimp by boiling them in water until they reach an internal temperature of 145°F / 63°C. Let them cool, then slice in half lengthwise.

Prepare the vegetables
Julienne the carrots and cucumbers, and chop the mint and cilantro leaves.
Pro tip: Use a mandoline slicer for evenly cut vegetables.
Soften the rice paper
Fill a large shallow dish with lukewarm water. Submerge one rice paper wrapper at a time for about 10 seconds until soft.
Pro tip: Don't over-soak the rice paper as it can tear easily.
Assemble the rolls
Place the softened rice paper on a clean surface. In the centre, layer shrimp, carrots, cucumbers, bean sprouts, mint, and cilantro.
Pro tip: Leave about 2 cm on each side of the wrapper for folding.
Roll the wrappers
Fold the sides of the rice paper over the filling, then roll tightly from one end to the other to enclose the filling.
Pro tip: Ensure the rolls are tight to prevent them from falling apart.
Serve
Cut each roll in half and serve immediately with your choice of dipping sauce.
