Prepare the filling
In a skillet over medium heat, cook the ground chicken until browned, about 5 minutes. Add cabbage, carrot, and green onions; cook for another 3 minutes. Stir in soy sauce, ginger, and garlic, cooking until fragrant. Remove from heat and let cool.
Pro tip: Ensure the filling is cooled completely to prevent the rice paper from becoming soggy.
Soften rice paper
Fill a shallow dish with warm water. Quickly dip each rice paper sheet into the water to soften for about 5 seconds, then lay it on a clean damp kitchen towel.
Pro tip: Do not over-soak the rice paper as it will become too fragile to handle.
Assemble the rolls
Place about 2 tablespoons of filling in the centre of a softened rice paper sheet. Fold the sides over the filling and roll tightly from the bottom to form a cylinder. Repeat with remaining ingredients.

Preheat the oven
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
Bake the rolls
Place the rolls on the prepared baking sheet. Brush lightly with vegetable oil. Bake in the preheated oven for about 15 minutes, or until golden brown and crispy, turning halfway through.
