Instructions
Cook the pasta
Bring a large pot of salted water to a boil. Add linguine and cook until al dente, about 9-11 minutes. Reserve 1 cup of pasta water, then drain the pasta.
Pro tip: Reserve some pasta water to adjust the sauce consistency later.
Prepare the shrimp
In a large skillet over medium-high heat, add olive oil. Season shrimp with Cajun seasoning. Cook shrimp for 2-3 minutes per side until opaque and cooked through. Remove from skillet and set aside.
Pro tip: Ensure shrimp are cooked to an internal temperature of 63°C (145°F) for safety.
Sauté aromatics
In the same skillet, add butter and melt over medium heat. Add diced bell pepper and minced garlic, cooking until soft and fragrant, about 3 minutes.
Make the sauce
Stir in heavy cream and let it simmer for 2 minutes. Add Parmesan cheese, stirring until melted and the sauce thickens slightly.
Pro tip: Adjust seasoning with salt and pepper to taste.
Combine pasta and sauce
Add cooked linguine to the skillet, tossing to coat in the sauce. Add reserved pasta water gradually to reach desired sauce consistency.
Finish the dish
Return shrimp to the skillet and add lemon juice. Toss everything together. Garnish with chopped parsley before serving.
Pro tip: Serve immediately for best flavour and texture.
