Prepare the Beef
In a large Dutch oven, heat the olive oil over medium-high heat. Brown the beef chunks on all sides, then remove them from the pot.

Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent, about 5 minutes.

Braise the Beef
Return the beef to the pot. Add the beef stock, red wine, tomato paste, thyme, salt, and pepper. Bring to a simmer, cover, and braise in a preheated oven at 325°F (163°C) for 2.5 hours or until the beef is tender.

Cool and Process the Beef
