Preheat and prepare
Preheat your oven to 325°F (163°C). Pat the beef chuck roast dry with paper towels, then season generously with salt and pepper.

Sear the beef
In a large ovenproof pot or Dutch oven, heat olive oil over medium-high heat. Add the beef and sear on all sides until browned, about 4-5 minutes per side. Remove and set aside.

Sauté vegetables
In the same pot, add onion, garlic, carrots, and celery. Cook until the onion is translucent, about 5 minutes. Stir in the tomato paste and cook for another minute.

Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes.

Braise in oven

Rest and serve
Remove beef from the pot and let it rest for 15 minutes before slicing. Serve with sauce and vegetables.
