Prepare the Crust
Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture into the bottom and up the sides of a 23 cm (9-inch) tart pan.

Bake the Crust
Place the crust in the preheated oven and bake for 10 minutes. Once done, remove from the oven and let it cool completely.

Make the Vanilla Filling
In a saucepan, combine milk and half of the sugar. Add the scraped vanilla bean seeds and pod. Heat over medium heat until it begins to simmer.

Prepare the Egg Mixture
In a separate bowl, whisk together the remaining sugar, cornstarch, and egg yolks until smooth. Remove the vanilla pod from the milk mixture.
Thicken the Custard
Slowly pour the hot milk mixture into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened and bubbling, about 5 minutes.
Pro tip: The custard is ready when it coats the back of a spoon and holds a line drawn through it.
Cool and Fill
Remove the custard from heat and stir in the butter until smooth. Pour the custard into the cooled crust. Cover with plastic wrap, pressing directly onto the surface, and chill for at least 1 hour.
