Instructions
Marinate the Chicken
In a large bowl, combine soy sauce, rice wine, ginger, and garlic. Add the chicken thighs and toss to coat. Cover and marinate in the fridge for at least 30 minutes.

Prepare the Batter
In another bowl, mix flour, cornstarch, and baking powder. Gradually whisk in cold water until smooth. The batter should be slightly runny.

First Fry
Heat oil in a deep fryer or large pot to 160°C (320°F). Dip each marinated chicken piece in the batter, letting excess drip off, then carefully lower into the hot oil. Fry in batches for 8-10 minutes until pale golden. Remove and drain on paper towels.

Second Fry
Increase oil temperature to 180°C (356°F). Refry the chicken in batches for another 3-5 minutes until deep golden and crispy. Drain again on paper towels.

In a small saucepan, combine gochujang, honey, soy sauce, sesame oil, and rice vinegar. Heat over medium-low heat until smooth and slightly thickened, about 3-4 minutes.

Coat the Chicken
Toss the fried chicken in the warm glaze until well coated. Ensure each piece is evenly covered.
