Prepare the marinade
In a small bowl, whisk together honey, fresh lemon juice, soy sauce, minced garlic, and lemon zest until well combined.
Pro tip: Adjust the amount of honey or lemon juice to taste for a sweeter or tangier marinade.
Marinate the trout
Place the trout fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.
Pro tip: Turn the fillets halfway through marinating for an even coating.
Preheat the pan
Heat a non-stick skillet over medium heat and add olive oil.
Pro tip: Ensure the pan is hot before adding the trout to get a good sear.
Cook the trout
Remove the fillets from the marinade (reserve marinade) and season with salt and pepper. Place fillets skin-side down in the pan. Cook for 3-4 minutes on each side or until the internal temperature reaches 145°F (63°C).
Pro tip: The fish should flake easily with a fork when done.
Reduce the marinade
While the trout is cooking, pour the reserved marinade into a small saucepan. Bring to a boil and reduce heat to a simmer for 5 minutes, or until slightly thickened.
Pro tip: This glaze can also be brushed over the trout during the last minute of cooking for extra flavour.
Serve
Drizzle the reduced glaze over the cooked trout. Garnish with chopped parsley if desired. Serve immediately.
