Instructions
Prepare the Duck
Pat the duck breasts dry with paper towels. Score the skin in a crosshatch pattern, making sure not to cut into the meat. Season with salt and pepper.

Cook the Duck
Place the duck breasts skin-side down in a cold skillet. Heat over medium heat and cook for 6-8 minutes until the skin is crispy and golden. Flip and cook for an additional 4-5 minutes. Use a meat thermometer to ensure the internal temperature is 135°F (57°C) for medium-rare.
Pro tip: Start in a cold pan to gradually render the fat.
Rest the Duck
Remove the duck breasts from the skillet and let them rest on a cutting board for 5 minutes.

Prepare the Sauce Base
In the same skillet, add olive oil and shallot. Sauté over medium heat until the shallot is translucent.
Pro tip: Use the duck fat left in the pan for extra flavour.
Add Spices and Deglaze
Add cinnamon, allspice, and ginger. Stir for 30 seconds until fragrant. Pour in the whisky to deglaze the pan, scraping up any brown bits.

Finish the Sauce
Add chicken stock and brown sugar. Simmer until the sauce has reduced by half. Remove from heat and whisk in cold butter until smooth.

Serve
Slice the duck breasts and serve with the spiced whisky sauce drizzled over the top.
