Prepare the lamb
Trim excess fat from the lamb shoulder and cut it into 2.5 cm (1 inch) cubes.

Cook the curry
In a large pot, heat the vegetable oil over medium-high heat. Add the lamb cubes and brown on all sides, about 5 minutes. Remove and set aside.

Sauté aromatics
In the same pot, add the onion, garlic, and ginger. Sauté until the onion is translucent, about 3-4 minutes.

Add spices and liquids
Stir in the curry powder, then add the browned lamb, canned tomatoes, coconut milk, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 45 minutes, until the lamb is tender.

Prepare potato crust
Preheat the oven to 200°C (400°F). Arrange the sliced potatoes in a circular pattern over the curry. Brush with melted butter and sprinkle with salt.

Bake in the preheated oven for 30-35 minutes, or until the potatoes are golden and crispy.
