Prepare the Lamb
Preheat your oven to 325°F (165°C). Season the lamb shoulder generously with salt and black pepper on all sides.

Sear the Lamb
In a large Dutch oven or heavy-bottomed pot, heat olive oil over medium-high heat. Add the lamb and sear until golden brown on all sides, about 4-5 minutes per side. Remove the lamb and set aside.

Sauté the Garlic
In the same pot, reduce the heat to medium and add the garlic cloves. Sauté for 2-3 minutes until fragrant and lightly browned.

Deglaze the Pot
Add the white wine to the pot, scraping up any browned bits from the bottom. Stir in the tomato paste and cook for 2 minutes.

Add Stock and Herbs
Pour in the beef stock and add the thyme and rosemary. Stir to combine and bring to a simmer.

Braise the Lamb
Return the seared lamb to the pot, cover, and place in the preheated oven. Braise for 2 to 2.5 hours, or until the lamb is tender and reaches an internal temperature of at least 145°F (63°C).
Pro tip: Check the lamb every hour to ensure there's enough liquid.
Rest and Serve
Remove the pot from the oven and let the lamb rest for 10 minutes. Slice and serve with the braising liquid and garlic cloves.
