In a medium bowl, whisk together the egg yolks, sugar, and salt until pale and smooth.

Combine and strain the custard
Slowly pour the warm cream into the egg mixture, whisking constantly. Strain the mixture through a fine-mesh sieve into a clean bowl to remove any solids.

Divide the custard mixture among six 175 ml (6 oz) ramekins. Place the ramekins in a large baking dish.
