Prepare and Sear the Moose
Season the moose chunks with salt and pepper. Heat olive oil in a dutch oven over medium-high heat. Sear the moose chunks until browned on all sides, about 5 minutes. Remove and set aside.

Sauté the Aromatics
In the same pot, add onions and garlic. Sauté until onions are translucent, about 3 minutes.
Cook the Mushrooms
Add the mushrooms to the pot and cook until they release their moisture and begin to brown, about 5-7 minutes.
Pro tip: Stir occasionally to prevent sticking.
Deglaze the Pot
Pour in the red wine to deglaze, scraping up the browned bits from the bottom of the pot. Let it reduce by half, about 3 minutes.
Combine Ingredients
Return the moose to the pot. Add beef broth, tomato paste, thyme, and bay leaves. Stir to combine.

Braise the Moose
Bring to a simmer, cover, and reduce heat to low. Braise for 2.5 to 3 hours, or until the moose is tender.
