Thirteen minutes per pound at 325°F, unstuffed. Stuffing adds about twenty percent, because the oven now has to heat a dense mass of bread sitting in the coldest part of the bird — and that stuffing has to reach 165°F itself before the turkey is safe.
Measure in the thickest part of the thigh, not the breast, and keep the probe off the bone. The thigh is the last part to come up to temperature; if it reads 165°F (74°C), everything ahead of it already has.
Rest at least twenty minutes, longer for a big bird, tented loosely with foil. A turkey holds heat for a surprisingly long time, and the rest is what gives you slices instead of shreds. It also frees the oven for everything else at exactly the moment you need it.

About 2 h 40 unstuffed, or 3 h 10 stuffed. Start checking the thigh at two hours — ovens vary more than turkeys do.
Should I cover the turkey with foil?
Cover the breast loosely once it browns, usually about two thirds of the way through, and take the foil off for the last twenty minutes if you want more colour.
Is it safe to stuff a turkey?
Yes, if the stuffing itself reaches 165°F (74°C). Stuff it loosely and just before roasting — never the night before, and never packed tight.
