Marinate

Toss shrimp with olive oil, lime juice, lime zest, garlic, red pepper flakes, cumin, and salt. Marinate for 15-30 minutes. Do not marinate longer — the acid in lime juice will start to cook the shrimp and make them rubbery.

Skewer

Thread shrimp onto metal or soaked wooden skewers, piercing through both the tail and the thick end so they lay flat and cook evenly.

Grill hot and fast

Grill over high direct heat for 2-3 minutes per side until the shrimp are pink, slightly charred at the edges, and just cooked through.

Pro tip: Shrimp are done when they form a loose C shape. A tight O means they are overcooked.

Transfer to a platter. Squeeze extra lime juice on top and scatter with fresh cilantro. Serve immediately.
