Instructions
Make the crust
Mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9x13 foil pan.
Make the brownie batter
Whisk melted butter and sugar. Beat in eggs and vanilla. Fold in cocoa powder, flour, salt, and chocolate chips. Pour over the graham crust and spread evenly.
Smoke the brownies
Place the pan on a smoker set to 325°F with cherry or apple wood (mild, sweet smoke). Bake for 25-28 minutes until the brownie is set but still slightly fudgy in the center.
Add the topping
Remove from smoker. Cover the top evenly with mini marshmallows and remaining chocolate chips. Return to the smoker for 5-7 minutes until marshmallows are puffed and golden brown.
Pro tip: Watch carefully — marshmallows go from golden to burned very quickly. A light golden brown is the goal.
Cool and cut
Let cool completely in the pan for at least 30 minutes. The marshmallow needs to set before cutting. Slice into bars and serve.
