Mix the base
In a bowl, combine softened cream cheese, 1.5 cups of the cheddar, sour cream, beer, garlic powder, paprika, mustard powder, and cayenne. Stir until smooth.
Add chicken
Fold in the shredded chicken until evenly distributed throughout the cheese mixture.
Transfer to skillet
Pour the mixture into a 10-inch cast iron skillet. Top with the remaining 1/2 cup of shredded cheddar.
Smoke
Place the skillet on a smoker set to 250°F with hickory or pecan wood. Smoke for 40-45 minutes until the edges are bubbly and the top cheese is melted and slightly golden.
Pro tip: Stir halfway through smoking to ensure even heating and maximum smoke penetration.
Serve
