Seared Ahi Tuna Steaks Sesame-Crusted

Sesame-crusted ahi tuna is one of the most elegant dishes you can make in minutes. Sushi-grade tuna is coated in a mix of black and white sesame seeds, then seared for just 30 seconds per side in a screaming-hot skillet. The result is a gorgeous contrast of crunchy, nutty crust and silky, rare tuna.

Make the dipping sauce

Whisk together soy sauce, rice vinegar, sesame oil, ginger, and sriracha. Set aside.

Prep the tuna

Pat tuna steaks completely dry. Brush lightly with sesame oil on all sides. Mix white and black sesame seeds on a plate and press each tuna steak into the seeds, coating all sides evenly.

Pro tip: The tuna must be sushi-grade from a trusted fishmonger since the center will be raw.

Heat the pan

Heat a cast iron or stainless steel skillet over the highest heat possible with avocado oil. The oil should shimmer and just begin to smoke.

Sear fast

Place tuna in the skillet and sear for 30-45 seconds per side. Sear the edges briefly too by holding the steak with tongs. The sesame seeds should be golden and toasted while the center remains raw and ruby red.

Slice and serve

Rest for 2 minutes. Slice into 1/4-inch thick pieces against the grain. Fan on a plate, drizzle with dipping sauce, and garnish with sliced green onion.
