Make the filling
Whisk together pumpkin puree, sweetened condensed milk, eggs, cinnamon, ginger, nutmeg, cloves, salt, and vanilla until completely smooth.
Fill the crust
Place the pie crust in a pie plate. Pour the filling into the crust, smoothing the top.
Smoke the pie
Set the pellet grill to 325°F with pecan or cherry pellets — these give the most subtle, pleasant smoke. Place the pie on the grate and close the lid. Smoke for 50-55 minutes until the filling is set around the edges but still has a slight jiggle in the very center.
Pro tip: Place the pie on a sheet pan for easier handling and to prevent the crust from burning on the bottom.
Cool completely
Remove from the grill and let cool at room temperature for 30 minutes, then refrigerate for at least 2 hours until fully set.
