Prepare the Beef
Trim excess fat from the beef chuck roast and cut into large chunks.

Marinate the Beef
In a large bowl, combine soy sauce, brown sugar, garlic, ginger, sesame oil, and red pepper flakes. Add the beef chunks and toss to coat. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

Sear the Beef
Heat vegetable oil in a large heavy-bottomed pot over medium-high heat. Sear the beef chunks on all sides until browned, about 8 minutes. Remove and set aside.
