Make the glaze
Whisk together honey, soy sauce, sesame oil, garlic, ginger, rice vinegar, and sriracha. Set aside half for serving (do not contaminate with raw fish).
Season the salmon
Pat fillets dry. Brush skin side with oil. Brush flesh side with some of the glaze.
Grill skin-side first
Place salmon skin-side down on a well-oiled grill over medium heat (375°F). Close the lid and cook for 6-7 minutes until the skin is crispy and releases easily from the grate.
Glaze and flip
Brush the top with more glaze. Carefully flip and cook for 3-4 more minutes, brushing with glaze again, until salmon reaches 135°F for medium.
Pro tip: The sugar in honey burns easily — watch carefully after flipping and move to indirect heat if flare-ups occur.
Serve
Rest 2 minutes. Drizzle with the reserved clean glaze. Sprinkle with sesame seeds and sliced green onions.
