Butterfly the tails

Using kitchen shears, cut along the top center of each lobster shell lengthwise, stopping at the tail fan. Gently pry the shell open and lift the meat up through the slit, resting it on top of the shell while still attached at the base.

Make herb butter

Melt butter in a small saucepan. Stir in garlic, parsley, chives, lemon juice, and smoked paprika. Keep warm for basting.

Season the tails

Brush the exposed lobster meat with olive oil and season with salt and pepper.

Grill shell-side down

Place lobster tails shell-side down on the grill over medium-high heat (375-400°F). Close the lid and cook for 5-6 minutes.

Pro tip: Starting shell-side down lets the shell act as a protective barrier and natural cooking vessel.

Baste and finish

Brush the meat generously with herb butter. Continue grilling for 3-4 more minutes until the meat is opaque and reaches 140°F. The shell will be charred — this is fine and adds flavor.
