Grilled Honey Cornbread Muffins

Cornbread belongs at every BBQ, and baking these muffins directly on the grill adds a subtle smoky note you can not get from the oven. Sweetened with honey and enriched with buttermilk, these muffins are moist, slightly sweet, and golden on top. They are the ideal vessel for sopping up BBQ sauce and pot liquor.

Instructions

Mix dry ingredients

Whisk together cornmeal, flour, sugar, baking powder, and salt in a large bowl.

Mix wet ingredients

In a separate bowl, whisk buttermilk, eggs, melted butter, and honey until smooth.

Combine

Pour wet ingredients into dry and stir until just combined. Do not overmix — a few lumps are fine. Overmixing makes tough muffins.

Fill and grill

Grease a muffin tin or use silicone muffin cups. Fill each cup 2/3 full. Place on a grill set to 375°F over indirect heat. Close the lid and bake for 18-22 minutes until golden on top and a toothpick comes out clean.

Pro tip: Indirect heat is essential — direct heat will burn the bottoms before the tops are done.

Serve

Let cool in the tin for 5 minutes. Drizzle with extra honey while warm and serve immediately.
