Instructions
Mix dry ingredients
Whisk together cornmeal, flour, sugar, baking powder, and salt in a large bowl.
Mix wet ingredients
In a separate bowl, whisk buttermilk, eggs, melted butter, and honey until smooth.
Combine
Pour wet ingredients into dry and stir until just combined. Do not overmix — a few lumps are fine. Overmixing makes tough muffins.
Fill and grill
Grease a muffin tin or use silicone muffin cups. Fill each cup 2/3 full. Place on a grill set to 375°F over indirect heat. Close the lid and bake for 18-22 minutes until golden on top and a toothpick comes out clean.
Pro tip: Indirect heat is essential — direct heat will burn the bottoms before the tops are done.
Serve
Let cool in the tin for 5 minutes. Drizzle with extra honey while warm and serve immediately.
