Prep the peaches
Cut peaches in half and remove the pit. Brush the cut sides with melted butter. Mix sugar, cinnamon, and nutmeg, then sprinkle over the cut surfaces.
Grill cut-side down
Place peaches cut-side down on a grill over medium-high heat (400°F). Grill for 4-5 minutes without moving until deep grill marks form and the sugar caramelizes.
Pro tip: Choose peaches that are ripe but still firm — overripe peaches will fall apart on the grill.
Flip and warm
Flip to skin side down and grill 2-3 more minutes until the peaches are heated through and slightly softened.
Serve
Place peach halves on plates, cut-side up. Top each with a scoop of vanilla ice cream and a drizzle of honey. Serve immediately.
