Classic Shrimp Scampi on the Grill

Place a cast iron skillet on the grill over medium-high heat (400°F). Add olive oil and butter. Let the butter melt and begin to foam.

Cook the garlic

Add sliced garlic and red pepper flakes to the butter. Cook for 30-45 seconds until fragrant but not browned — burnt garlic is bitter.

Sear the shrimp

Add shrimp in a single layer. Cook for 2 minutes without moving until the bottoms are pink and seared. Flip each shrimp and cook 1 more minute.

Pro tip: Do not overcrowd the skillet — cook in batches if needed to ensure searing, not steaming.

Deglaze

Pour in white wine and lemon juice. Let it bubble vigorously for 1-2 minutes, scraping the bottom of the skillet to release all the flavorful bits. The sauce will reduce and emulsify with the butter into a silky coating.

Season with salt. Remove from heat and toss with fresh parsley. Serve immediately over pasta or with crusty bread.
