Instructions
Prepare the almond cream
In a bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the almond flour and vanilla extract until smooth.

Roll out the pastry
Roll out the puff pastry sheets to about 3 mm (1/8 inch) thick. Cut two circles, about 23 cm (9 inches) in diameter.

Assemble the galette
Place one pastry circle on a baking sheet lined with parchment paper. Spread the almond cream over the pastry, leaving a 2 cm (3/4 inch) border. Hide the fève in the cream.

Seal the galette
Brush the border with beaten egg yolk. Cover with the second pastry circle, pressing the edges to seal. Flute the edges with a knife or fork.

Decorate and chill
Score a decorative pattern on top with a sharp knife, being careful not to cut through. Chill the assembled galette in the refrigerator for 30 minutes.

Bake the galette
Preheat the oven to 200°C (400°F). Brush the top with the remaining egg wash. Bake the galette for 35-40 minutes, or until golden brown and puffed.
