Place over a pot of simmering water, ensuring the bowl doesn't touch the water, and whisk constantly until thickened. Gradually whisk in melted butter until the sauce is smooth and creamy. Remove from heat and keep warm.

Toast the English Muffins
While preparing the hollandaise sauce, split and toast the English muffins until golden brown. Set aside.
Cook the Canadian Bacon

Poach the Eggs
