Instructions
Prepare the brine
In a medium saucepan, combine vinegar, water, sugar, salt, mustard seeds, black peppercorns, and red pepper flakes. Bring to a boil over medium heat, stirring until sugar and salt dissolve.
Pro tip: Ensure the brine is well-mixed before boiling.
Prepare the jars
Sterilize jars and lids by boiling them in water for 10 minutes. Carefully remove and let them air dry.
Pro tip: Handle hot jars with tongs to avoid burns.
Pack the jars
Divide the cauliflower florets, garlic, and onion among the sterilized jars, packing them tightly.
Pro tip: Leave about 1 cm of headspace at the top of the jars.
Pour the brine
Carefully pour the hot brine over the vegetables in each jar, ensuring the vegetables are completely submerged.
Pro tip: Use a funnel to avoid spills.
Seal the jars
Wipe the rims of the jars with a clean cloth to ensure a good seal. Place the lids on and screw the bands until fingertip tight.
Pro tip: Do not over-tighten the lids.
Cool and store
Allow the jars to cool to room temperature before refrigerating. Let the pickles marinate for at least 1 week before consuming.
Pro tip: For best results, store in the fridge for up to 3 months.
