Make candied bacon
Cook bacon until crispy. While still warm, drizzle with bourbon and sprinkle with brown sugar and cayenne. Let the sugar melt and coat the bacon. Chop into small pieces once cool.
Make the brownie batter
Whisk melted butter and sugar. Beat in eggs, bourbon, and vanilla. Fold in cocoa powder, flour, salt, and chocolate chips. The batter should be thick and glossy.
Pour and top
Line a 9x9 foil pan with parchment paper. Pour in the batter and spread evenly. Press candied bacon pieces into the top.
Smoke
Place the pan on a smoker set to 325°F with cherry wood. Smoke for 25-30 minutes until the edges are set and the center is still slightly fudgy. A toothpick should come out with moist crumbs, not wet batter.

Cool and finish
Let cool in the pan for at least 30 minutes. Sprinkle with flaky sea salt just before cutting into squares.
