Instructions
Make spicy mayo
Whisk together mayonnaise, sriracha, and lime juice. Refrigerate until ready to use.
Grill jalapeños
Toss jalapeño rings with a drizzle of oil and grill or griddle for 2-3 minutes until slightly charred and softened.
Smash the patties
Divide beef into 8 balls. Heat griddle to maximum. Place balls on the griddle and smash flat immediately. Season with salt, cayenne, and garlic powder. Cook 2 minutes per side.
Add cheese
After flipping, place pepper jack on 4 of the patties. Add a splash of water near the patties and cover to create steam for fast melting, about 30 seconds.
Pro tip: The steam trick melts cheese perfectly without overcooking the patty.
Stack and serve
Stack two patties per bun (cheese patty on top). Add grilled jalapeños, crispy bacon, and a generous spread of spicy mayo.
