Score the surface of the ham in a diamond pattern about 1/4 inch deep. Stud the intersections with whole cloves.

Make the glaze

Combine maple syrup, brown sugar, Dijon, cider vinegar, cinnamon, ground cloves, and pepper in a saucepan. Simmer for 5 minutes until slightly thickened.

Set up the smoker

Preheat your smoker to 250°F using maple or apple wood chunks.

Smoke the ham

Place ham in a disposable aluminum pan. Smoke for 3 hours, basting with glaze every 45 minutes.

Glaze and finish

Apply a thick final coat of glaze and increase temperature to 325°F. Cook for another hour until the glaze is caramelized and internal temperature reaches 140°F.

Rest for 20 minutes, tent loosely with foil. Slice and serve with remaining glaze.
