Form stuffed patties
Divide meat into 8 portions. Flatten each into a thin disc. Pile cheddar cubes in the center of 4 discs. Top with remaining discs and press edges firmly to seal all around, ensuring no gaps where cheese can leak.
Pro tip: Make the top patty slightly larger than the bottom to ensure a proper seal around the edges.
Chill briefly
Place formed patties in the fridge for 15 minutes. This firms them up and helps the seal hold during grilling.
Grill
Preheat grill to medium-high (400°F). Grill stuffed patties for 5-6 minutes per side. Avoid pressing down on them — you do not want to squeeze out the cheese.
