Instructions
Make the cheese sauce
Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute. Gradually add milk while whisking constantly. Cook until thickened, about 5 minutes. Remove from heat and stir in Gruyère, cheddar, garlic powder, nutmeg, salt, and pepper until smooth.
Layer the casserole
Grease a 9x13 baking dish. Layer: thin potatoes, diced ham, crumbled bacon, cheese sauce. Repeat 3 times, ending with cheese sauce on top.
Top and cover
Sprinkle any remaining shredded cheese on top. Cover tightly with foil.
Pro tip: Slicing the potatoes to a uniform 1/8 inch ensures even cooking — use a mandoline if you have one.
Bake covered
Bake at 375°F for 45 minutes covered. The steam trapped under the foil will cook the potatoes through.
Brown the top
Remove foil and bake for 15 more minutes until the top is golden brown and bubbly. For an extra crispy top, broil for 2-3 minutes watching carefully.
Rest and serve
Let rest for 10 minutes before cutting. This allows the layers to set and makes for neater servings.
