Prep the bacon
Par-cook bacon in a skillet for 3-4 minutes until pliable but not fully crispy. It needs to be flexible enough to wrap around the patty.
Form stuffed patties
Divide beef into 8 thin patties. Place cubes of pepper jack in the center of 4 patties. Top each with another patty and press edges firmly to seal, ensuring no cheese can escape.
Pro tip: Wet your fingers slightly when sealing edges to get a better bond.
Wrap with bacon
Wrap 2 strips of par-cooked bacon around each stuffed patty, securing with toothpicks. Season the outside with garlic powder, onion powder, paprika, salt, and pepper.
Grill the burgers
Grill over medium-high heat (400°F) for 6-7 minutes per side until the bacon is crispy and internal temperature reaches 160°F. Keep the lid closed as much as possible.
Assemble
Remove toothpicks. Place each burger on a toasted pretzel bun. Top with jalapeño slices, chipotle mayo, and butter lettuce. Serve immediately while the cheese is still flowing.
