Fèves au lard are a staple of every Quebec sugar shack meal. This smoker version adds a layer of wood smoke that makes them even more irresistible. Low effort, huge flavor.

Cook the bacon
In a cast iron skillet or Dutch oven, cook diced bacon until crispy. Remove bacon, leave the fat.

Sauté onion
Cook diced onion in the bacon fat until softened, about 5 minutes.

Combine everything
Add drained beans, crispy bacon, maple syrup, ketchup, mustard, vinegar, Worcestershire, paprika, and garlic powder. Stir well.

Smoke
Place the uncovered pot on the smoker at 250°F with maple or hickory wood. Smoke for 3 hours, stirring once halfway through.

Serve
The sauce will thicken and caramelize on top. Stir and serve hot.

These beans are even better the next day. Store in the fridge and reheat on the smoker or stovetop.
