Instructions
Make the glaze
Whisk maple syrup, both mustards, vinegar, paprika, and garlic powder together in a bowl.
Smoke the sausages
Set up smoker or grill for indirect heat at 275°F with a few maple or apple wood chunks. Smoke sausages for 35-40 minutes.
Glaze and sear
Brush sausages generously with the maple mustard glaze. Move to direct heat and grill 2-3 minutes per side until the glaze is caramelized and bubbly.
Serve
Apply one final coat of glaze and serve immediately.
